1.5 cup of whole wheat flour

1.5 tsp of grated ginger

1 tsp of cinnamon

1.5 tsp of baking soda

1 tsp of vanilla extract

1/4 tsp of salt

3 tbsp of coconut oil melted

1 large egg

1/4 cup of blackstrap molasses

5 tbsp of maple syrup

Mix all the wet stuff together and then add it to the mixed dry stuff.  Place parchment paper on a cookie sheet and make cookie dough into balls.  Make it twice as high as it is wide.  Then chill it in the freezer for 30 minute.  If you don’t do this they will flatten into one big cookie.  Then bake at 325 degrees for 12-15 minutes.  Let them cool for 10 minutes and then take them off the pan.  Enjoy!

Note:

Hide these from your husband if he has a cookie problem, and give them out one at a time or he may eat them all!!!  Great chance to practice forgiveness though.  Now I can make another batch with my 3 year old and have great fun!
